Boiling the noodles to eighty percent and rinsing them cold is what keeps them springy in the pan instead of gummy; they finish cooking in the stir-fry, drinking the soy and chili paste as they go. Everything else is sequencing: egg first so it comes out in soft pieces, ham for a minute of color, vegetables only until they lose their raw edge, then everything back together.

Ingredients
| 200 g | fresh noodles |
| half | carrot , shredded |
| half | cabbage , shredded |
| 1 | ham sausage , sliced |
| 2 | eggs , beaten |
| 2 tbsp | light soy sauce |
| 1 tbsp | oyster sauce |
| 1.5 tbsp | chili paste |
| 2 tbsp | cooking oil , divided |
Method
- Shred the carrot and cabbage and slice the ham.
- Beat the eggs in a bowl.
- Boil the noodles until they are about eighty percent done, still firm at the center.
- Drain and rinse the noodles under cold water.
- Heat oil in the pan and scramble the eggs until just cooked, then remove.
- Give the ham slices a quick fry in the same pan and set them aside too.
- Add a little more oil and stir-fry the carrot and cabbage until just tender.
- Return the ham and eggs to the pan, add the drained noodles and toss everything together.
- Season with the light soy, oyster sauce and chili paste, stir-fry briefly to coat, and plate.
Notes
- Stop the boil at eighty percent. Noodles carried to done will break apart when tossed.
- The chili paste brings most of the salt, so season with the soy sauce after it goes in.
- A wide pan beats a wok here; the noodles need room to toss without piling up.
