This is a leftover rescue dish: the liver is already braised, so the wok work is short and fierce. Twenty bird's-eye chilies look alarming, but their heat blooms into the oil and mellows against the liver; the celery and garlic leaves stay crisp because each gets only seconds.

Flash-Fried Braised Pork Liver With Celery and Chili
Slices of ready-braised liver take barely two minutes over high heat, just long enough to pick up aromatics, a splash of aged rice wine, celery and a heavy hand of bird's-eye chilies.

Ingredients
| 1 piece, about 200 g | braised pork liver , sliced thin |
| 20 | bird's-eye chilies |
| 2 stalks | celery , cut into short sections |
| 2 stalks | garlic sprout leaves |
| 6 | garlic cloves |
| 1 small knob | ginger |
| 1 tbsp | aged rice wine |
| 1 small handful | toasted sesame seeds |
| salt | to taste |
Method
- Slice the braised liver thin and get everything else cut first: celery sections, garlic cloves whole, ginger slivers, garlic sprout leaves trimmed.
- Heat oil in a wok until it shimmers, then fry the ginger, garlic and chilies until they smell fragrant.
- Add the liver slices and toss just until they soften and heat through.
- Pour the aged rice wine down the side of the wok to lift the aroma and cut any liveriness.
- Add the celery and stir for 20 seconds, then the garlic sprout leaves for 10 more.
- Toss in the sesame seeds, check the salt and take the wok off the heat.
Notes
- The liver is already cooked; you are only heating it through and coating it, so a total wok time over two minutes turns it chalky.
- Out of fresh chilies: bloom a spoonful of chili flakes in the hot oil instead.
- Slice the liver while it is still cold from the fridge; it holds its shape and cuts thinner than at room temperature.
